05 F150 5.4L Overheating or Bad Sensor

Hello, I have a 2005 f150 5.4l fx4 and I was driving from the Miami to the keys a few days ago, and my truck's temperature guage told me that the truck was overheating. So, I pulled over and let it cool off. It did this to me a few times driving down. I noticed that if i just turned off the car and turned it back on, the problem was fixed, and very little time was needed for it to cool off which makes me think its a bad sensor. It has continued to do this, and on my edge, it says my engine control temp trips the car's guage at 240, but from cold start to the 220 range, it only takes a few minutes, then the car begins to gradually rise in temperature and eventually reaches 240 and will trip the guage. But, if i turn the car off and then immediately back on, the guage goes down to the 200 range within seconds which makes me think that its a bad sensor, because how does the engine lose so much heat in a few seconds if there is no coolant running through it. I am going to add another container of oil in a few minutes and see if that fixes the problem. Any input is greatly appreciated.
