Can someome give me info on 5th wheel hauling, is there a way to configure a new super duty (at time of ordering) to haul 2800lbs pin weight, and 14700 gvwr trailer weight.

You are pushing the legal limits of a 350, if you are going to tow regularly, opt for the 450/550...the 350 will tow that all day long, but stopping it is another story...
