I'm with you on this one Bluejay. Chili does not have beans. I'm a pureist in the truest sense. I won't even use ground beef in my chili. I was always told that chili came about on the wagon trails as a method to disguise the taste from meat that is starting to turn.

I eat my chili (these notherners here just think it is spicy meat) over white rice with cheese. Sometimes if I'm feeling generous I'll cook up a seperate pot of kidney beans and people can put these on their chili seperately.

Chili is served with cheddar cheese (shredded or sticks), sour cream, jalapeños and saltine crackers to be added at your desire...
Chili always has ground beef and beans. Anything else is a topping for a chili like meal.

So, what's all the arguing about?

Oh boy, Closer, you started out so good, then fell in it face first! Ground beef? It should be beef cubes. I think I'll go down to the General Store and order a big bowl of "topping". No telling what they will serve me. On the other hand, if I order a bowl of chili, I get chili, no beans, and crackers.

I liek Texas BBQ also except for the fact that the beans are not sweet. And the BBQ sauce is sometimes not sweet. My BBQ has to be super sweet.

Beef cubes is good, I prefer to use a roast or two (one pork, 1-2 lb, and one beef 3-5 lb) and shred the meat.

When I finish a pot of chili (usually a day or two), it immediately goes in the fridge for an overnight stay. It just tastes better as leftovers. Anybody else do this?

I'm with ya on the BBQ beans. I can't stand the ranch style beans at all. Sweet BBQ beans are great. But I love me some Texas style Brisket!

I bet you don't like black-eyed peas, either. Rattlesnake pole beans? Purple hulls?

A plate of purple hulls w/ some chow-chow and cornbread and you can keep your chili.
