New rear rotors and pads failing from dealer after 300 miles..

Hello everyone, I wanted to get your thoughts on this.

Recently I took my 2007 F150 with 104k miles in for new tires. Tech advises that I need to replace rotors and pads on the rear brakes. I agree even though the brakes were working fine. The service advisor has always been right about my truck. About 300 miles later, the rear end shudders a lot when applying the brakes.

Mitigating Factors: After about 10 miles of driving - Slow speed, turning left, immediately as I depress the brake pedal and fully reproducible.
The dealer has fixed the issue by turning both rotors and installing new pads.

Why would new rotors need to be turned? Shouldn't they have replaced the rotors with new ones?

Rotor turning is an important step to ensure the braking surface is smooth, uniform, and compatible with the brake pads.
