Scanning tool - AutoXRay EZ-link?

Just borrowed my neighbors OBD II scanning/monitor tool. Has anyone used the Auto X Ray EZ-link? What settings should I monitor? It has a "short term fuel trim" that ranges from -100%(maximum lean) to 99.92%(maximum rich). 0% indicates an ideal(according to book) 14.6 to 1 air-fuel mixture. At what % should my truck read w/ a 4# pulley and Diablo Delta chip by REM? It also has a "long term fuel trim" monitor. I can monitor intake manifold pressure, ingnition timing advance and intake air temperature. I'm sure there are other things I can monitor but I want to know what to monitor and what those #'s should be. Thanks for any advice or help.

BTW, the reason I found out about this was the truck threw some kind of ECT sensor code today, cleared the code and it has not come back. I did run some octane boost in it yesterday.
