Not too complicated.

Need:
RTV Sealant (Ford doesn't use a gasket for the cover)
3 Liters gear oil 75 W140 (Motorcraft=$20.00 per liter)
4oz Friction Modifier P/N: F1TZ-19580-B

-Loosen all of the bolts holding the differntial cover.
-Place a container under the differential and using a screw driver, Pry the cover away to allow to oil to drain.
-Clean the cover and remove all of the old gasket from the differntial case and cover.
-Place a thin bead of sealant around the cover mating surface (circles around the bolt holes) and reinstall.
-Refill differential (the fill plug is located on the side of the differential and uses a 3/4" driver)
-After filling the differential, it's a good idea to raise and lower each side of the axle to distribute the oil to the bearings. You should also drive in cirlcles a few times in each direction before going for a drive and then check the level again.

Here's a cut and paste from the 2000 service manual for an 8.8 rear.

Removal

1. Raise and support the vehicle.

2. Note:
Empty the lubricant into a clean container for reuse.

Remove the differential housing cover (4033).

1 Remove the 10 differential housing cover bolts (4346) and drain the lubricant from the rear axle housing (4010).

2 Remove the differential housing cover.

Installation

1. CAUTION:
Make sure the machined surfaces on both the rear axle housing and the differential housing cover are clean and free of oil before installing the new silicone sealant. The inside of the rear axle (4001) must be covered when cleaning the machined surface to prevent contamination.

Clean the gasket mating surface of the rear axle and the differential housing cover.

2. Apply a new continuous bead of sealant to the differential housing cover.

Use Silicone Rubber D6AZ-19562-AA or equivalent meeting Ford specifications ESB-M4G92-A and ESE-M4G195-A.

3. Note:
The differential housing cover must be installed within 15 minutes of application of the silicone, or new sealant must be applied. If possible, allow one hour before filling with lubricant to make sure the silicone sealant has properly cured.

Install the differential housing cover.

1 Install the differential housing cover.

2 Install the 10 differential housing cover bolts.

4. CAUTION:
For Traction-Lok® axles, first fill the rear axle (4001) with 118 ml (4 oz) of specified Ford Friction Modifier.

Note: Service refill capacities are determined by filling the rear axle to the level shown.

Fill the rear axle with 2.4 liters (5.5 pints) of SAE 75W-140 High Performance Rear Axle Lubricant F1TZ-19580-B or equivalent meeting Ford specification WSL-M2C192-A and install the filler plug.

5. Lower the vehicle.
