That being said I'd go no less then 8K lbs and 12 or 16K if I had the $$$$.

The maximum rating on winches is with a full spool of wire. The longer you let it out, the worse the gear ratio on the spool and the less you can pull.
That's why on the Gooseneck trailer there was probably a lot of cable out reducing its capacity to pull.
A 3k winch would be great for hauling game onto a trailer or pulling up ATV's.
A light car with not much slope on the ramps would work ok also.
BUT, have the tow vehicle facing up a grade and have short ramps and it might have trouble pulling a car onto the trailer. Of course these can be remedied by just turning the tow vehicle and trailer downhill.... but sometimes this is not possible.

And turning the tow vehicle and trailer downhill to load a car with a winch is a BAD idea.

That will be plenty of winch. I am using one rated at 2,000 lbs I believe. You are not pulling dead weight, look at how much it will pull rolling. I am using a Superwinch T2000, or something like that - it is small. It will pull a 3,200 lb car onto a trailer that it always uphill becauue I have to back onto a set of ramps to get the rear of the trailer low enough to the ground the headers do not drag. Now if I ever tore up a rear gear or something like that and had to get it onto the trailer I doubt the little winch would do it.

An easy way to double your pull is to get a ****** block. Also the first layer of cable on the drum will pull the hardest. The more cable you have out the harder it pulls. I recommend these people. Motoalliance, just add a www and a .com in the right places. They are stand up people and I assure you they will bend over backwards to help you out if you ever have a problem with it.
