I did that ten years ago. Back then the only transmission options were a C4, good but no overdrive. The other option was the V6's 5 speed manual, too weak.
I know there are kits to use the AOD or the 5 speed out of the V8 Mustang.
Advance Adaptors was one vendor. Start doing Google search's.
BTW, BUILT 302+Ranger 4X4+ snow = Chevy driver with his jaw in a snowdrift! The dual exhaust with glass packs helped.

HI!... I have a 408C.I (stroked 351-W) in a "83" FORD RANGER. Been in there since "85". Screw the motor mounts. Go with a front and mid engine plate. 10 times stronger and 10 times easier to get the engine/trans out. I run a race built C-4, never broke it and I make over 700H.P N/A. Then there's the 250 fogger! LOL!
