Knock Sensor needs replacing

Hey guys, my check engine light came on and I brought it to the dealer to get it checked out (which was really stupid on my part because they charge $120 disagnostic charge and I could have gotten a trouble code analyzer for that much!!). They said that the trouble code was for the knock sensor. They want to charge me about $100 for the part and $700 for the labor!!!! I about choked when he told me the labor cost but he said they have to remove the 3 piece intake and it is time consuming. Does anyone have any suggestions? How hard it is to do this myself? Does anyone know any good independent shops in the San Francisco Bay Area who would treat me fairly if it is too difficult for me to do myself?

The truck is a 2004 F150 5.4L 3v with 158,000 miles on it. I did notice that it seemed to hesitate or miss when on the gas, but ran smoothly when I was cruising along.
