Low Oil P On start, Jumping on cruise

So last week had a mis-fire code on cylinder 6. Sparks changed 4k miles ago. As a diagnostic measure, i swapped the coil on 6 with 5. Since then no issues, and this may not be related just wanted to be through.
This morning it takes 3 turn overs to start the truck, never had this issue before. Drive to work and park it for 8 hours. Go to start up takes two turnovers and "Low Oil Pressure" messages quickly flashes on then off. I drive about 10 miles and the truck starts jumping/jolting on the highway cruise set at 75 (been driving 75 the whole 10miles).
Let it set for two hours, check fluids and start it up. I got the low oil pressure on first startup but then turn off and start back up no warning. Drove probably 2 miles ranging from speeds of 0-75, no issue.
Thoughts?

More Info:
This morning the truck started up fine. I used remote starter so I didnt see if it posted a low oil pressure but it started up flawlessly it sounded.
New issue now is i can accelerate and my tachometer will show 2.5-3k and the truck stays stationary and then suddenly accelerates.
The jumping didnt happen at all during my highway commute but in lower gears any time i went to accelerate i had the issue i just mentioned.

Well looks like its not a COP.
Went to start it up after work yesterday and got "Transmission Malfunction" as well as P0720 (OSS sensor circuit fault), P0722 (Output shaft speed sensor no signal), and P2106.hrottle actuator control system forced limited power). Truck would sit and just rev in 1,2, and D.
First thing I'm going to look at is the OSS sensor, which in my research seems to very likely cause all three codes. Next thing may be to check the trans filter.
Sound about right? Any other advice?
