I'd suggest the BFG AT KO's, Nitto Terra Grapplers or Toyo Open Country AT's. As for wear, I have a little over 45,000 miles on my BFG AT KO's and expect to get another 15,000.

A 315/75-16 will work fine on a 16x8 wheel. That is the first I have heard about that size being discontinued.
I just read in Truckin' that Toyo is building a plant/warehouse in Georgia to produce tires, so maybe the Toyo's and Nitto's will be more easily available in the future.
I've heard mixed reviews on the Pro Comps. I havn't really heard anything bad about their MT's but some people don't have a lot of great things to say about the AT's. Their new AT Xtreme seems to be getting good reviews.

Yes, and a 315/75-16 is a 35x12.50.
