Fit with this tires (Toyo MT):
35x12.50R17 125Q E/10 360310 8.5-10.0-11.0

Fit on an 2006 4X4 with a 2" AS?

If you have a minute, can you explain how you know? And maybe what all these numbers mean?

Also, how is the following American Racing wheel, with such different specs (mainly the offset) also recommended for my truck; and will is also work with the above tires?

First, your OEM wheels are 7.5 inches wide with 5.5 inches of backspacing. The aftermarket 17x8's are gonna stick out 1.5 inches farther. The aftermarket 17x9's are gonna stick out 2.5 inches farther than the OEM wheels. Can you visualize how this is gonna affect fitment with a 35x12.50 tire? The 17x8's with 35's may fit (barely), but I doubt it. I think you can fit a 33x12.50 with either wheel.

How does the 12.50 (width?) relate to the width of the wheels?

Most 12.50 inch wide (305mm) tires recommend an 8 to 10 inch wide wheel.
