on my truck with just the 2.5 lift and the rims i got? dont wanna change anything on my truck now......not worn in enuff ........but will this tire fit on the rim and in the well without rubbing?

Well, they will fit but 7.5 inches is too narrow for a 325mm wide tire. Usually running a tire on a rim that's too narrow will cause the center portion of the tires tread to wear slightly faster than normal, similar to running too much air pressure. A few members here have installed 325/60-18's on their OEM wheels. Maybe they will post an update on how they are wearing.
