Well, you don't mention the wheel diameter you want to use, but one recommendation is to go with the BFG All Terrain LT325/65R18/D which is 34.7 inches tall so right in the range you want. The BFG ATs have great onroad performance (long wear and decent handling) and will get you just about anywhere you might want to go offroad, and they look great. BFGs tend to a bit pricier than most of the other major brands, but if you shop them at Discount Tire or Tire Rack you might negotiate a very competitive price. Just a suggestion.

if you are putting on stock rims, do not go with a 325, especially a 325/65 just a bit too wide to feel safe on the stock rims. If you are going with aftermarket rims then you wouldn't be able to fit them without a lift.

Is your truck leveled? any lift?

if not leveled or lifted 285/65R18 (33x11.50)
if leveled not lifted 305/65R18 (34x12)

You can squeeze on some 315's with a leveling kit on the stock wheels.

If you use the stock wheels or 8" with 5 1/2" backspacing aftermarket wheels you won't have any rubbing problems. I've been having my daystar kit on for over 2 yrs. and over 20k miles with no problems. Remember the taller and heavier the tires are at all 4 corner's will reduce your gas mileage and the performance of your truck.

For tires: sounds like the Pro Comp Extreme All Terrain's would fit your needs purty drn good. They are a very agressive tire for an A/T but also have very good road manners and will last you quite awhile. Great tire and look much better in person vs. online
