I'd go with a 9 inch wide wheel and around 5 inches of backspacing.

I'm not sure of all the width/bs combo's on the Rockstars but 4Wheel Parts carries all of them.

from what I seen Kmc is only making those rockstars in 8.5 inch width. on bpg specs page it has recomendationed rim widths for each tire they sell. most of the 12 to 12.5 width tires are recomended on for a 8.5 to 11 and the tires 13"+ are recomended for a 9"+ rim. that being said. there are many on here that have mounted tires on a rim smaller than the manufactures recomended rim size with out any problems. a good example is the many members on here that mounted 315/70/17's on a stock 7.5 inch wide rim (8.5 is the minimum recomended). I have not heard of any problems doing this I would just make sure I never ran underinflated or max inflated as most people do not do anyways. I do not think you would have any issues running say 325/60/20's on those rockstars with a 8.5 inch width. if you really want the 9 inch wide rim you might consider the KMC monsters which is what I am getting. mine are 18X9 I am pretty sure they make it in 20X9 and maybe 20X10 I am not sure as I did not look at the 20's.
