Towing with 295/60/20's

Selling my lifted 04 this week and upgrading to a 07-08 King Ranch and looking to get some bigger tires. I have 35x12.50x20 on my truck now with a 6 inch and the stock 3.73's and towing my Blazer Bay 2220 sucks...it does alright around 55-60 in 3rd with the torque converter locked but any faster than that and it get annoying...gets around 8 mpg or so. Would I be putting myself back into the same situation if I were to get the 295/60/20's for my new truck? I don't mind getting 305/55/20's like I had before I lifted my truck but a little bigger tire looks a hell of a lot better leveled. Any experience would be great. Thanks
